Fresh tasting alternative to the regular bean dip.

Recipe Ingredients for Fava Bean Dip with Roasted Garlic and Yogurt

1 c Fava Beans (cooked + skins removed)
8 cloves garlic (roasted)
2 tbsp fat free yogurt (I used plain greek)
1 tsp olive oil
2 tbsp thyme (fresh)
1 tbsp lemon juice (fresh)
2 tbsp water
1 dash salt

Recipe Directions for Fava Bean Dip with Roasted Garlic and Yogurt

  1. Drain the fava beans of most (but not all) their liquid if using canned.

  2. Squeeze the garlic out of each clove of roasted garlic, and combine with the beans and olive oil in a food processor.

  3. Whiz until very smooth, then add the thyme leaves, lemon juice and yogurt, and whiz some more. If too thick, add a drizzle of water. Taste and add salt and pepper to taste.

  4. This dip is excellent right away, but it gets remarkably better after two days in the refrigerator. The garlic really blooms. Serve with crackers, toast, or vegetables.
