High protein, low carb "potato salad" made with cauliflower!

Recipe Ingredients for Fauxtato Salad

1 head cauliflower, medium
3 hard boiled eggs
2 stalks celery
2 green onions
1/2 large yellow bell pepper
4 oz Cheddar Cheese Cubes
1/2 c parsley
3/4 c mayo
3 tsp stone ground mustard
2 tbsp Garlic Powder
2 tbsp garlic salt
2 tbsp paprika
1 tsp lemon juice
1 pepper to taste

Recipe Directions for Fauxtato Salad

Chop Cauliflower into small pieces and steam until tender. Thinly slice onion, celery, and bell pepper and finely chop the parsley. Cube the cheese and slice the eggs. Combine all the above ingredients with the spices and set aside. Then, mix the mayo, mustard and lemon juice well. Add the mayo mixture to the rest of the ingredients and toss well. Enjoy!
