From La Dolce Vegan. Can use seitan instead of tofu.

Recipe Ingredients for Faux Sausage

14 oz firm tofu
2 cups water
2 tablespoons soy sauce
1 tablespoon nutritional yeast
1 1/2 teaspoons sugar
1 (tsp) Worcestershire Sauce, vegan
1 teaspoon dried sage
1 teaspoon onion powder
1/2 teaspoon ground black pepper
1/4 teaspoon dried oregano
1/8 teaspoon red pepper flakes
1/8 teaspoon ground cloves
1 teaspoon smoked paprika

Recipe Directions for Faux Sausage

  1. Drain and cut tofu into desired shape.

  2. Bring remaining ingredients to a boil and add tofu. Cook covered for 1 hour or until liquid is adsorbed, stirring every 10 minutes. Remove from heat.

  3. If a firmer texture is desired, the faux sausage can be pan-fried or baked.
