Recipe Ingredients for Faux Pasta Salad

1 cup slices Squash, Summer, All Varieties
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
1/2 cup, chopped Peppers, Sweet, Red
1/2 cup, pared, chopped Cucumber, Peeled
1/2 cup, chopped Carrots
1 large Olives, Ripe, Canned (Small-extra Large)
4 oz Pepperoncini
8 slices Sliced Turkey Pepperoni
4 oz Feta Cheese Crumbles
1/4 cup, chopped Onions, Spring Or Scallions
1 serving Tomatoes
1 avocado, NS as to Florida or California Avocados

Recipe Directions for Faux Pasta Salad

  1. Shred Squash & Zucchini

  2. Chop & Slice all veggies (except Avocado)

  3. Quarter Pepperoni

  4. Use Pepperoncini Juice as dressing

  5. Let chill with juice overnight

  6. Chop Avocado, add just before serving
