I woke up too late to consider this a breakfast, so I just threw it together kind of like for breakfast and lunch. I don't know what else to call it, other than jambalaya or gumbo because of how thick it is. I can assure you though, you won't be disappointed regardless!

Recipe Ingredients for faux gumbo :)

2 cups water
1 olive oil spray
1 Onion Yellow
1 cup mushrooms
1 cup Brown Rice
1 cup Wild Pink Salmon
1 cup Tomatoes

Recipe Directions for faux gumbo :)

  1. cook brown rice in 2 cups of water for about 20 minutes until rice is done. set aside.

  2. saute onion and mushroom until onions are caramelized

  3. add stewed tomatoes and drained salmon and let simmer on low for about 10 minutes.

  4. add rice to mixture and serve!

  5. very yummy for a healthy dish.
