Recipe Ingredients for Faux-Fried Eggplant & Mozzarella 'Sandwiches'

1 cup fiber one bran cereal
1/4 teaspoon salt
1/2 cup part-skim mozzarella cheese
1/2 cup fat-free liquid egg substitute
1 eggplant
10 fresh basil leaves
1 teaspoon Italian seasoning
1 tablespoon grated parmesan cheese
2 tablespoons diced onion
2 teaspoons chopped garlic
1 cup canned tomatoes
1/2 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper

Recipe Directions for Faux-Fried Eggplant & Mozzarella 'Sandwiches'

  1. Preheat oven to 350.

  2. Spray large baking sheets with nonstick spray.

  3. Put cereal and salt in a blender or food processor and grind cereal to bread-crumb like consistency. Transfer crumbs to a plate and set aside.

  4. Pour egg substitute in a bowl. Dip one side of the eggplant into the egg substitute and then lay it in the dish of crumbs egg side down. Put the slice crumb side up on the baking sheet. Repeat with other eggplant slices.

  5. Spray the tops of the slices with nonstick spray and bake in the oven until eggplant begins to softe, about 10 minutes.

  6. Remove pan from oven, flip over half the eggplant slices so the crumb side faces down and sprinkle with mozzarella cheese and chopped basil. Put one of the remaining eggplant slices, crumb side up on top of the cheese. Sprinkle with Italian seasoning and shredded parmesan.

  7. Return to the oven and bake until cheese is melted and coating is crispy, about ten minutes.

  8. Meanwhile, make the sauce by bringing a medium pot sprayed with nonstick spray to medium-high heat. Add onion and garlic, stirring occasionally, cook until soft, about 2 minutes.

  9. Add all other sauce ingredients to the pot and mix well. Continue to cook and stir until hot, about 2 minutes. Season to taste with additional salt & pepper. Remove from heat and set aside.

  10. Serve eggplant sandwiches with warm sauce for dipping.
