Recipe Ingredients for Faux Crabcakes

1 lb imitation crabmeat
1/4 c light mayonaisse
1 tsp lemon juice
1 tbs lemon peel , grated
1 tbs fresh ginger, grated
2 tbs onion, grated
1/4 c bread crumbs
1 cayenne pepper to taste

Recipe Directions for Faux Crabcakes

  1. With fingers or a fork, shred imitation crab coarsely.

  2. Stir in mayo, lemon juice and rind, ginger and onion. Season with cayenne to taste.

  3. Add bread crumbs to make a firm mixture. Shape into four cakes. Refrigerate, covered, at least one hour.

  4. Fry in a non-stick skillet coated with cooking spray for about 10 minutes per side or until browned and crisp.
