Recipe Ingredients for Faux Coquille St. Jacques

1/2 lb sea scallops
4 tbs light margarine
2 tbs all-purpose flour
3/4 c skim milk
2 large button mushrooms
1/4 c diced onion
1/8 tsp cayenne pepper
1/2 tsp salt
1/4 tsp pepper
1/4 c bread crumbs
2 tsp light margarine, melted

Recipe Directions for Faux Coquille St. Jacques

  1. Add 2 tbs margarine to pan and melt. Add flour to make a rue. Slowly add in milk until thickened. Add mushrooms and onions and spices and simmer for 5 minutes, stirring constantly. Add 2 Tbs margarine to pan and lightly sear scallops until opaque. Quarter and add to sauce mixture.

  2. Mix bread crumbs with butter and set aside.

  3. Spoon filling into each crepe an roll. Place in baking dish and cover with remaining mixture. Top with breadcrumbs and bake until bread crumbs are brown and dish is bubbly.
