Nice warm or summer soup of watercress

Recipe Ingredients for fatnic's watercress soup

2 cups watercress, roughly chopped
1/2 onion, chopped
1 tbsp smart balance
1 tbsp flour
16 oz vegetable stock
1 cup skim milk
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for fatnic's watercress soup

  1. Heat smart balance/butter in pan.

  2. On low heat, add chopped onion and watercress - about 15 mins until soft.

  3. Add flour and stir to make a little roux, then remove from heat.

  4. Gradually add stock and milk, stirring.

  5. Heat through. You can boil it to thicken.

  6. Season to taste.
