Spanish-style omletter which can be made with any vegetables you have lying around. Fresh herbs are essential.

Recipe Ingredients for Fatnic's spring spanish omlette

1 green pepper
1 red onion
1 yellow onion
2 garlic cloves
2 1/2 tbsp olive oil
1 eggplant
3 oz potato, boiled, drained and diced
10 sun-dried tomatoes, sliced
10 eggs
2 oz parmesan cheese, grated
2 oz herbs - 2 handfulls mixed fresh herbs roughly chopped
1 salt
1 pepper

Recipe Directions for Fatnic's spring spanish omlette

  1. Sweat the eggplant: slice it up and place it in a colander covered with salt for about 30 mins. Then wash it thoroughly and dry the slices. Set aside.

  2. Slice onions.

  3. Heat 2 tbsp olive oil in a very large heavy frying pan (10 inches or more).

  4. Add crushed garlic for a few seconds, then add the onion slices and fry gently for about 10 mins. Do not let them catch or brown.

  5. Heat the broiler. Cut the pepper into quarters and place them skin-side up under the flame. Allow the skin to blister and blacken, then remove from the heat and allow to cool under a damp tea-towel. Peel off the skins and slice the flesh.

  6. When the eggplant has 'sweated' and been washed and dried, add this to the frying onions, along with another 1/2 tbsp olive oil. Allow to fry for another 10-15 mins, unitl the eggplant slices are soft and slightly golden.

  7. Meanwhile, crack the eggs into a bowl and gently whisk with a fork. Add the herbs, seasoning and grated parmesan. Mix well.

  8. Add the prepared potato, tomatoes and pepper to the frying pan and remive from the heat.

  9. Pour the egg mixture over the vegetables in the pan. Stir once to ensure an even coating of egg. Return pan to a gentle heat for about 15 mins.

  10. Cover the pan with foil and cook for afew mins more.

  11. If desired, place pan under the hot broiler/grill for a couple of minutes to finish off.

  12. CAn be served hot, warm or cold.
