English style pancakes for Shrove Tuesday - or Mardi Gras. You can have any fillings, but the basic is the sugar and lemon juice.

Recipe Ingredients for fatnic's pancakes

4 oz all purpose flour
2 large eggs
7 oz milk
2 oz butter
1 (pinch) salt
1 tsp sugar
1 tsp lemon juice

Recipe Directions for fatnic's pancakes

  1. Sift flour into bowl.

  2. Make well in centre of flour. Crack eggs into it.

  3. Mix eggs in using fork, spoon or electric whisk. Incorporate all the flour.

  4. Gradually whisk in milk mixed with 3oz cold water.

  5. When ready to make, melt butter and add to batter mixture.

  6. Heat a small non-stick frying pan. Melt a tiny bit of butter in it.

  7. When it is sizzling hot, spoon int just enough batter to cover the base of the pan. Swirl it around to make it even.

  8. Keep it over the medium-high heat until the mixture goes a pale colour.

  9. Lift the pan up and toss the pancake over.

  10. Cook a few seconds on the other side.

  11. It should look gently golden but not burnt.

  12. Serve with any topping - A sprinkling of sugar, squeeze of lemon juice is lovely.
