Recipe Ingredients for Fat Free Sugar Free Banana Bran Walnut Muffins

2/3 cup unsweetened apple sauce
1 cup SPLENDA No Calorie
6 small bananas, mashed
1/2 cup (8th Continent) Light Original Soymilk
1 teaspoon vanilla extract
1/2 cup egg beaters
2 egg whites, beaten
2 1/2 cups Whole Wheat Flour
3/4 cup wheat bran
1 tbs baking powder
1 1/2 teaspoon baking soda
1 tsp ground cinnamon
1/2 teaspoon salt
3/4 cup chopped walnuts

Recipe Directions for Fat Free Sugar Free Banana Bran Walnut Muffins

  1. Preheat oven to 375 degrees F .

  2. Spray muffin pan with Pam Spray or line with paper muffin liners.

  3. In a large mixing bowl, mix apple sauce and Splenda. Add bananas, soymilk, vanilla and egg beaters; mix well. Stir in flour, bran, baking powder, soda and salt; blend just until moistened. Stir in walnuts.

  4. Beat egg whites in a mixer until fluffy white peaks form. Gently fold them into the batter.

  5. Pour 1/3 cup batter into each prepared muffin cup.

  6. Bake at 375 degrees F for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Cool in the cups for 5 minutes, then remove muffins and place on a wire rack to cool completely.
