Yummy crockpot ratatouille brightened by fresh herbs and balsamic vinegar.

Recipe Ingredients for Fat- Free Ratatoille

1 medium eggplant, raw, cubed
28 oz canned tomatoes
1 medium onion, raw, diced
2 cups red peppers, raw, cubed
1/4 cup basil, raw
1/4 cup parsley, raw
2 tbs balsamic vinegar

Recipe Directions for Fat- Free Ratatoille

  1. Combine eggplant, onions, tomatoes, peppers in crockpot.

  2. Cook on high for 4 hours.

  3. Stir in herbs and vinegar.
