I created this Fat Free Whole Grain Muffin to accommodate my husband's heart healthy diet.

Recipe Ingredients for Fat Free Carrot Raisin Muffins

2 1/4 serving King Arthur 100% Whole Wheat flour
1 cup (not packed) Raisins, Seedless
0.33 cup, packed Sugars, Brown
1 1/4 tsp Baking Powder
1/2 tsp Cinnamon, Ground
1/4 tsp Salt, Table
1 cup Milk, Nonfat, Fluid
4 1/4 cup Carrots Shredded
1/2 cup Egg Beaters
1/4 cup Unsweetened Applesauce

Recipe Directions for Fat Free Carrot Raisin Muffins

  1. Preheat oven to 375 degrees. Spray twelve 2 3/4 inch muffin cups with non stick cooking spray.

  2. In large bowl, combine flour, raisins, sugar, baking powder, cinnamon and salt.

  3. In small bowl combine remaining ingredients. Add liquid ingredients to the dry ingredients, mixing with fork until just combined.

  4. Spoon batter evenly into the 12 prepared cups.

  5. Bake for 20 to 25 minutes, until toothpick inserted in center comes out clean.

  6. Let stand for 5 minutes. Remove from pan and cool completely.
