Pretty good. I am always nervous about weather the muffins will rise properly.. but these did sufficiently. They are not sweet.. so if you want them to be sweet, just add sweetener, or alll banana in place of applesauce, or even fruit flavored fat free yougurt (I used plain). Also, I am a huge cinnamon fan, so I use alot, you can modify to your own likings! I personally like bulk... so I would have much preffered them to be larger (next time I would make 6-8 out of this recipe). Feel free to modify and experiment!! (note: they do stick to the paper muffin cups when they are fresh... but after they have been in the fridge they are fine!)

Recipe Ingredients for Fat Free BBB muffins

2 egg whites
4 tablespoons fat free yogurt
3 tablespoons water
2 tsp lemon juice
1/2 tablespoon vanilla
1 cup bananas (1 med.)
1/4 cup applesauce
1 cup flour (1/3 ww & 2/3 wht)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup blueberries
1/3 cup wheat bran
1 tablespoon cinnamon

Recipe Directions for Fat Free BBB muffins

  1. Preheat oven to 350-degrees.

  2. Prepare muffin pans paper muffin cups - set aside.

  3. In a mixing bowl, combine egg whites, yogurt, water, lemon juice, vanilla, applesauce, and bananas.

  4. In another mixing bowl, combine flour, bran baking powder, baking soda, cinnamon, and blueberries.

  5. Fill muffin pans and bake for 20 to 25 minutes (when making 11, will probably need to be longer if making less/ larger muffins).
