If you can't find fat free Pita / Middle-Eastern flat breads then make your own using this recipe at half the calories of commercial breads. It takes about 30 mins. You can use a mixture of wholemeal / rye and white flour instead of just white flour.

Recipe Ingredients for Fat free Arabic style flat breads

135 g white flour
1/2 tsp salt
1 tsp yeast
1/4 cup water
1 tsp sugar

Recipe Directions for Fat free Arabic style flat breads

  1. Mix yeast with a little warm water and mix in with the sugar and allow mixture to rise for 10 minutes.

  2. Then mix the yeast mixture with flour and salt and knead to a smooth pliable dough - add a little water if dough is too stiff. Dough should be smooth and not sticky.

  3. At this point you should leave the dough covered in a warm place to prove and double in size (about 1 hour) but if like me you don't have the time you can skip this - your bread will not taste as good or keep long but will still be nice enough to eat!

  4. Split into 6 balls and then roll out each one into a flat oblong or round shape then bake in pre-heated oven at 200 degrees C (392 F) normally for 8 minutes but varies depending on your oven so keep an eye on them to insure they don't burn. The thinner you make them the more they puff up.

  5. Because of the lack of fat these breads tend to dry out very quickly so make in small batches as needed and once baked cover them in a clean damp cloth and store in a paper or plastic bag or wrap in Aluminium foil.

  6. You can improve this by adding herbs and or spices such as thyme/ rosemary and some caraway seeds or turmeric powder (which gives it a yellowish colour).

  7. If you have some stale bread leftover you can crumble them into chips and sprinkle with herbs/ a little salt and toast them in oven for a few minutes for fat free chips (US)/ Crisps (UK) these can be used instead of tortilla chips with fat free tomato or cheese dips.
