Low fat Cheesy chicken enchiladas

Recipe Ingredients for Fastest Enchiladas

14 oz tomato ( w/ green chiles)
1/2 cup scallions
1/2 cup cilantro
2 tbs lime juice
2 cups reduced fat cheddar shredded cheese
2 cups chicken breast
1 cup light sour cream
1/4 cup diced red onion
8 fat free flour tortillas

Recipe Directions for Fastest Enchiladas

  1. Preheat oven to 350 degrees.

  2. Drain tomatoes. Add cilantro and scallions. Reserve

  3. Combine chicken, 1 cup of cheese, sour cream.

  4. Divide mixture between 6 tortillas. Roll tortillas around the filling.

  5. Set tortillas onto 13x9 . Greased dish

  6. Cover with tomato mixture.

  7. Cover with remaining cheese.

  8. Bake for 10 minutes or until bubbly.
