Recipe Ingredients for Fast Potato Leek Soup

12 c chicken broth
12 oz leeks
1 t fresh basil
3 t salt
5 c instant potato flakes
3 c half and half
4 T butter

Recipe Directions for Fast Potato Leek Soup

  1. Wash and prepare leeks, removing tough outer dark green parts. Slice in half lengthwise (best to do this before washing.) Then julienne cut across grain.

  2. Saute leeks in butter until soft and clearing.

  3. Add with minced basil to hot broth. Add salt and potato flakes and stir briskly. Simmer hot (covered) for 15 minutes.

  4. Add half & half, then return to hot simmer (med heat) until steaming hot.
