Yummy! Literally made from a leftover box of pasta, leftover veggies, and other things in my fridge. VERY filling and lowfat and only takes about 20 mins.

Recipe Ingredients for Fast N Easy Pasta Salad

8 oz macaroni, dry
1 cup frozen spinach
1/8 cup frozen chopped onions (I used a mirepoix mix)
1/4 cup canned tomatoes and chilies, drained
2/3 cup frozen mixed veggies, cooked and cooled
4 tbsp fat free Italian dressing
2 tbsp light mayo
2 tsp garlic powder
1 tsp chili powder
1 tsp black pepper

Recipe Directions for Fast N Easy Pasta Salad

  1. Boil pasta in accordance to instructions.

  2. Meanwhile, place spinach and onions (or mirepoix) in a colander and run first very warm then cold water over them in order to thaw then chill. Allow to drain.

  3. Mix italian, mayo, and spices together well with a fork until slightly bubbly.

  4. Drain pasta and run very cold water over it. I also mixed some crushed ice in to chill faster. When well chilled, place in a large bowl.

  5. Squeeze spinach and onions to press as much water out as possible, then add to pasta.

  6. Add tomatoes and veggies.

  7. Add dressing and mix well.

  8. Chill or eat directly.

  9. I served with grilled chicken on top.
