Recipe Ingredients for Fast Mixed Vegetable Soup

3 tbsp Olive Oil
1 medium (2-1/2" dia) Onions
1 medium Carrots
1 stalk, medium (7-1/2" - 8" long) Celery
2 clove Garlic
42 oz Diced Tomatoes
2 cup Corn, Sweet, Yellow
1 cup Peas, Green
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
1/2 cup Parsley
8 cup Vegetable Stock

Recipe Directions for Fast Mixed Vegetable Soup

  1. Put 2 tbls. of oil in a large, deep pot over medium heat. When hot, add onion, carrot, celery and garlic. Sprinkle with salt and pepper and cook, stirring, until onion softens, about 5 minutes.

  2. Add the stock, tomato and remaining vegetables; bring to boil, lower heat so the mixture bubbles enthusiastically. Cook, stirring every now and then, until all the vegetable are very tender, 10-15 minutes. Taste and adjust seasoning, add the remaining tbls. of olive oil and serve.
