Recipe Ingredients for Fast Minestrone

1 large onion
2 cloves garlic
1 carrot
1 zucchini
1 quart water
2 cups tomato juice
28 oz Diced Tomatoes
1 potato
1/2 cup long grain brown rice
1 tbsp dried parsley
1 tsp Basil, Dried
1 tsp Oregano Leaves
1/2 tsp dried marjoram
1/4 tsp ground black pepper
10 oz Spinach
15 1/2 oz Cannellini
15 1/2 oz Organic Kidney Beans
1/2 tsp salt

Recipe Directions for Fast Minestrone

  1. Chop onion and garlic, slice carrot, quarter and slice zucchini. Steam-saute all in a large non-stick pot.

  2. After dicing the potato, all remaining ingredients through pepper. Simmer 35 minutes or more.

  3. Add remaining ingredients. Simmer another 20 minutes.
