Recipe Ingredients for Fast Minestrone

1 large onion
2 cloves garlic
1 stalk celery
1 carrot
1 quart water
2 cups tomato juice
28 oz chopped tomatoes
1 potato
1/2 c brown rice
1 tbsp parsley flakes
1 tsp dried basil
1 tsp dried oregano
1/2 tsp marjoram
1/4 tsp ground pepper
1 zucchini
10 oz spinach
3 4/5 oz cannellini beans

Recipe Directions for Fast Minestrone

  1. Place onion, garlic, celery, and carrot in a large soup pot with 1/2 cup of water.

  2. Cook, stirring, over medium heat about 5 minutes.

  3. Add the remaining water, tomato juice, tomatoes, potato rice, and seasonings.

  4. Bring to a boil, cover, reduce the heat, and simmer for 35 minutes.

  5. Add the remaining ingredients and cook fro 20 minutes longer.

  6. Serve at once.
