From the Company's Coming "Make Ahead Meals". Not too spicy with plenty of flavorful vegetables. Serve with bowls fo Cheddar cheese, sour cream, lettuce and diced tomatoes.

Recipe Ingredients for Fast Fajitas

3/4 lb. Sirloin Steak
2 tsp lime juice
1 tbsp salsa
1/4 tsp chilies
1/2 tsp ground cumin
134 g yellow pepper
100 g green pepper
150 g red pepper
1 tbsp lime juice
1/8 tsp ground cumin
1/2 tsp salt
1/8 tsp pepper
1/4 cup salsa

Recipe Directions for Fast Fajitas

  1. Combine first five ingredients in a ziplock bag. Freeze if desired, keeps for up to three months in the freezer.

  2. If beef is frozen, thaw.

  3. Stir-fry beef strips in first in frying pan or wok for 2 minutes or until cooked.

  4. Put peppers in frying pan, stir, cover, heat on medium heat for 2 minutes

  5. Add next four ingredients. Stir, scraping up any browned bits in pan. Add reserved beef and any accumulated juices. Stir. Increase to high heat, heat uncovered until moisture evaporates and mixture sizzles.

  6. Stir in salsa. Remove from heat. Keep warm.

  7. Fill warm tortillas with mixture, fold and top with lettuce, sour cream, salsa and cheese.
