Single serve bread pudding made quickly in the microwave.

Recipe Ingredients for Fast & Easy Blueberry Pudding

1 slice Dutch Country Soft Potato Bread
3 tablespoons fresh blueberries
1 large egg
1/3 c. 1% milk
1/4 tsp. vanilla
2 packets Stevia

Recipe Directions for Fast & Easy Blueberry Pudding

  1. Cut bread into cubes.

  2. Layer bread with berries in a microwave-safe bowl.

  3. Wisk together the egg,milk,vanilla and sugar. Pour over the bread and berries in the bowl, stirring gently to combine.

  4. Let rest for 10 to 15 minutes.

  5. Microwave for 2 minutes, uncovered. Check and see if it's still liquid. If it is, microwave in 30 second bursts, till pudding is cooked all the way to the center.

  6. Remove from microwave. Serve warm.
