Recipe Ingredients for Fast Creamy Chicken Stew

4 teaspoons extra-virgin olive oil, divided
1 1/2 cup onion, chopped
3 stalks celery, chopped
2 large carrot, chopped
16 ounces boneless chicken breast, cut into large chunks
3 cups low sodium chicken stock
3/4 teaspoon dried thyme
3/4 teaspoon dried marjoram
3/4 cup fat free milk
3/4 cup frozen peas
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Recipe Directions for Fast Creamy Chicken Stew

  1. In a large soup pot, heat 2 teaspoons of the oil and saute the onion, celery, and carrot over medium heat until softened.

  2. Scrape them to one side, add the remaining teaspoon of oil to the open space, and add the chicken.

  3. Sear the chicken chunks, undisturbed , over medium-high heat for a minute, and then stir.

  4. When the chicken is browned all over, add the stock, thyme, marjoram, and milk. Bring to a boil, then reduce the heat and simmer until the stew is the desired thickness.

  5. Add the peas, salt and pepper.

  6. Keep simmering on low heat.

  7. Refer to Whole Wheat Dumplings for the rest!
