Middle eastern Bean Dish Can be served for breakfast with Eggs

Recipe Ingredients for Fasoulia

1 tbsp olive oil
1 onion, sliced
3 cloves garlic, minced
1 jalapeno pepper, minced
1 tbsp curry powder
1 tbsp paprika
1 cup kidney beans
117 g (28 ? 32 ounce) can diced tomatoes
1/2 cup water
1 salt and pepper, to taste

Recipe Directions for Fasoulia

  1. In a large pot or dutch oven, heat 1 Tbsp olive oil over medium heat, then sautee 1 onion, sliced until translucent and starting to brown, about 10 ? 15 minutes.

  2. Add 3 cloves garlic, minced, 1 jalapeno pepper, minced, 1 Tbsp curry powder, and 1 Tbsp paprika, and sautee until fragrant, about 30 seconds to 1 minute.

  3. Add 2 large (28 ? 32 ounce) cans kidney beans, drained and rinsed, 1 large (28 ? 32 ounce) can diced tomatoes, and 1/2 cup water. Stir to combine, and simmer until the sauce has thickened and the beans have softened slightly.

  4. Add more water to adjust consistency, if needed, then add salt and pepper, to taste. Serve topped with eggs and a sprinkle of zaatar.
