A tabbouleh type grain salad. Add whatever veggies are your favorite. Adaptation of Giada's Farro Salad from food network.

Recipe Ingredients for Farro Salad

1 1/2 c. Farro
2 c. water
1/2 red bell pepper
2 c. green beans
1 c. olives
1/3 c. red wine vinegar
1/2 c. oil
1 tbl. dison mustard mustard

Recipe Directions for Farro Salad

  1. Simmer farro in salted water for 30 minutes. Drain and let cool. Blanch green beans. Cut up bell pepper, rough chop kalmata olives.

  2. Make vinaigrette with vinegar and oil, whisk in mustard, salt and pepper to taste.

  3. Pour dressing over farro, mix in veggies.
