Recipe Ingredients for Farro Risotto with roasted tomatoes and beef broth

3 tablespoons olive oil
2 onions
3 teaspoons chopped fresh marjoram
4 tomatoes
1 1/2 cups wheat berries
3 cups beef broth
1 teaspoon salt
1/2 cup freshly grated parmesan

Recipe Directions for Farro Risotto with roasted tomatoes and beef broth

  1. saute shallots in pressure cooker. Stire in marjoram, tomatoes, then farro. Add broth, lock on lid, cook on high pressure for 5 minutes. Reduce heat to low, cook for 5 minutes, then rest for 10 minutes to finish cooking.

  2. If too soupy, allow juice to boil away, uncovered. stir in cheese.
