Recipe Ingredients for Farmhouse Fricassee

2 T OLIVE OIL
1 ONION CHOPPED
1/2 cup DRY WHITE WINE
12 oz seitan, CUT IN 1 INCH PIECES
8 oz CARROTS
8 oz SMALL POTATOES, HALVED
8 oz GREEN BEANS, TRIMMED
14 1/2 oz DICED TOMATOES, DRAINED
1 tablespoon TARRAGON LEAVES

Recipe Directions for Farmhouse Fricassee

  1. HEAT 1 T OIL IN LRGE SKILLET OVER MEDIUM HEAD. ADD SHALLOTS, COVERE, AND COOK UNTIL SOFTENED, ABOUT 5 MINUTES. ADD THE WINE AND COOK FOR 1 MINUTES TO REDUCE SLIGHTLY. TRANSFER THE SHALLOT MIXTURE TO 4 TO 6 QUART SLOW COOKER.

  2. HEAT THE REMAINING 1 T OIL IN SAME SKILLET OVER MEDIUM HEADT ADD THE TEMPEH AND COOK UNTIL BROWN ON BOTH SIDES, ABOUT 10 MINUTES, THEN ADD TO THE SLOW COOKER ALONG WITH THE CARROTS, POTATOES, GREEN BEANS, TOMATOES, AND STOCK; SEASON WITH SALT AND PEPPER. STIR TO COMBINE, COVER, AND COOK ON LOW FOR 8 HOURS.

  3. JUST BEFORE SERVING, STIR IN the tarragon.
