Recipe Ingredients for Farmers Pasta

2 tbsp olive oil
3 oz prosciutto
2 tsp minced garlic
1/6 cup flour
3 1/2 cups milk, nonfat
1 oz fontina cheese
2 oz parmesan cheese
2 oz provolone cheese
1 oz mozzarella cheese
1 oz romano cheese
1 lb rigatoni pasta
1 1/2 tbsp fresh parsley
1 1/2 tbsp fresh basil

Recipe Directions for Farmers Pasta

  1. Preheat oven to 375 degrees F

  2. Heat 1 tbsp of oil in large pot over med-high heat. Add the pancetta/prosciutto and saute until crisp, about 5 min. Remove and add oil to 1/8 cup (substitute butter/marg for some of the oil).

  3. Reduce heat to medium. A garlic and saute until fragrant, about 30 seconds. Add flour and whisk for 2 min. Gradually whisk in the milk. Bring to a boil over med-high heat. Reduce heat to medium and simmer until sauce thickens slightly, whisking often, about 5 minutes. Gradually whisk in all the cheese.

  4. Meanwhile cook rigatone until almost al dente, about 7 minutes. (The pasta will continue cooking in the oven.) Drain the pasta and add to the cheese sauce. Add parsely, basil and prosciutto and toss to coat. Season with salt and pepper to taste. Transfer pasta to baking dish. Bake until the sauce bubbles, about 20 min.
