This recipe was listed in an advertisment for 'All Whites and Better n' Eggs' Made with low fat, unsalted everything. This recipe orginally calls for Chorizo sausage, but we substited the asparagus for the sausage.

Recipe Ingredients for Farmers Omlette skillet - modified from cooking light

2 cups egg whites
1 tablespoon olive oil
1/4 cup roasted red peppers
1/4 cup chopped green onion
1 tablespoon jalapeno pepper
1/4 tortilla chips
1/4 cup cheddar cheese
1/2 cup asparagus

Recipe Directions for Farmers Omlette skillet - modified from cooking light

  1. Pre- heat oven to 400 degress.

  2. Combine all ingredients, except egg white, and olive oil in a bowl.

  3. Mix well, then combine egg whites into the mixture.

  4. Heat a large nonstick skillet over medium heat, add olive oil to the skillet and swirl to coat pan.

  5. Add mixture to pan, lower heat. With a rubber spatula, begin pushing the egg mixture into the center of the pan, swirling the pan ahd keeping the eggs moving for 3 minutes. The eggs will start to congeal, forming an open-face omelet. Sprinkle the eggs with cheese. Place the pan in the oven to finish cooking for 3 minutes. Serve hot with warm salt free tortilla chips and salsa, and perhaps a spoon of low fat sour cream.
