Recipe Ingredients for Farmer's Eggs-Latin Style

28 oz Tomatoes Diced
7 oz Peppers, Chili, Green, Canned
1 medium raw Onion Red
0.5 cup Coriander Leaves
6 large Egg, Whole

Recipe Directions for Farmer's Eggs-Latin Style

In a glass baking dish, combine the tomatoes, onion, green chili, and cilantro. Salt to taste; add cumin or chili powder if desired. Bake at 350 F. for about 20 minutes to heat through. Open oven and use a big spoon to make 6 evenly placed "wells" in the vegetables. Break the eggs into the wells; bake another 15-20 minutes until eggs are poached.
