Better Homes & Garden's Farmer's Casserole (page 272)

Recipe Ingredients for Farmer's Casserole

310 g Ore-Ida shredded hash browns
3/4 c Sargento Pepper Jack cheese
8 oz cubed ham
1/4 c green onion
4 eggs
1 1/2 c milk
1/8 tsp salt
1/8 tsp black pepper

Recipe Directions for Farmer's Casserole

  1. Coat a 2-quart square baking dish with non-stick cooking spray.

  2. Arrange pototoes evenly in the bottom of the dish.

  3. Sprinkle with cheese, ham and green inions.

  4. In a bowl combine eggs, milk, salt and pepper.

  5. Pour egg mixture over potato mixture.

  6. Bake, uncovered in a 350 degree oven for 40 to 45 minutes or until a knife inserted near the center comes out clean.

  7. Let stand 5 minutes before serving.
