Breakfast casserole -- refrigerate overnight and ready first thing in the morning.

Recipe Ingredients for Farmer's Casserole

3 cups hash brown potatoes, frozen shredded
3/4 cup cheddar cheese, shredded
8 ounces pork sausage, browned
1/4 cup yellow onion, cooked with sausage
4 large eggs
12 ounces evaporated milk
1/4 tsp pepper
1/8 tsp salt

Recipe Directions for Farmer's Casserole

  1. Layer potatoes in 8 x 12 pan

  2. Sprinkle with cheese and cooked sausage

  3. Mix eggs, milk, salt and pepper

  4. Pour over all

  5. Refrigerate overnight

  6. Remove from refrigerator 30 minutes before baking

  7. Bake, uncovered, at 350 degrees for 55-60 minutes or until a knife inserted near the center comes out clean.
