I also like to add a can of black beans and a little minced garlic. For others who do not like the taste of cilantro, I chop 2 celery stalks including the leafy tops and mix that in.

Recipe Ingredients for Farm Stand Salsa Recipe

2 ears fresh sweet corn, cut off the cob
1/2 medium red onion, diced
2 green onions, white and green parts, chopped
1 1/2 pints cherry tomatoes, halved
1 avocado, halved, pitted, peeled, and chopped in chunks
1 jalapeno pepper, sliced
1 cup cilantro (1/4 bunch fresh cilantro), leaves chopped
2 tbsp. Lemon juice (1 medium lemon), juiced
2 tbsp. Lime juice (1 lime), juiced
1/4 cup extra-virgin olive oil
1/2 tsp. salt, to taste(SEA salt for less Sodium)
1 black pepper,freshly ground

  1. Combine all ingredients in a large mixing bowl, tossing to coat.

  2. Put the salsa in a sealable plastic container and take to a picnic, if desired.
