0.67 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1 small Peppers, Sweet, Red
1 cloves, raw Garlic
1.5 tbsp Chili Powder
1 pepper Pepper, Serrano
15 oz Diced Tomatoes
1.5 cup (8 fl oz) Water
1.5 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
1 cup Corn Whole Kernel

  1. heat oil in skillet

  2. saute veg about 5 min

  3. put in cooker with the rest of the ingredients

  4. cover & cook on low 6-8 hours
