German sourdough farm bread (TMF)

Recipe Ingredients for Farm Bread (TMF)

370 g rye flour
320 g bread flour
20 g salt
850 g bread flour
1 tbsp olive oil
880 g water
1/4 tsp yeast
20 g sugar

Recipe Directions for Farm Bread (TMF)

  1. prepare sourdough starter from 50 g rye flour and 50 g water. let this sit at ~30C for 2 days.

  2. mix rye, and 320 g bread flour, with water, sugar and starter.

  3. let ferment for 3 hours until batter produces air bubbles

  4. add remaining bread flour, yeasts salt and oil.

  5. let rise for 2 hours, shape and slash.

  6. bake at 480 F for 30 min, then 30 min at 420 F.
