Farfalle w/ Asparagus and Cherry Tomatoes

Recipe Ingredients for Farfalle w/ tomatoes

1 tbsp Extra Virgin Olive Oil
2 tbsp chopped Shallots
2 cloves, raw Garlic
3 cup Asparagus
2 cup Organic Cherry Tomatoes
12 oz Farfalle
0.5 cup leaves, whole Basil, Fresh
1 dash Pepper, Black

Recipe Directions for Farfalle w/ tomatoes

  1. Heat oil in a large skillet over a medium-high heat. Add garlic and shallots and cook for two minutes. Reduce heat to medium and add tomatoes; sauté until very soft, about 5 minutes. Stir in asparagus pieces and cook until bright green, about 2 minutes. Stir in basil and sprinkle with pepper.

  2. Meanwhile, cook pasta according to directions on package. Drain, reserving a little liquid. Add pasta and reserved liquid into a large pasta bowl. Add asparagus and tomato mixture, sprinkle cheese and toss well.
