Another modification of the classic Jet-Puffed Marshmallow Creme jar recipie, replacing chocolate with Andes Peppermint Chips. I used the butterscotch database number to keep this close to accurate.

Recipe Ingredients for Fantasy Peppermint Fudge

3 cups sugar
3/4 cups butter
5 ounce evaporated milk (small can)
11 ounce Andes Peppermint Crunch Baking Chips
7 ounce Jet-Puffed Marshmellow Creme
1 tablespoon vanilla

Recipe Directions for Fantasy Peppermint Fudge

  1. Heat sugar, butter, and evaporated milk to full rolling boil in 3-quart heavy saucepan on medium heat, stirring occasionally. Boil on medium heat until candy thermometer reaches 234 degrees F, stirring constantly to prevent scorching, about 4 minutes. Remove from heat.

  2. Stir in peppermint chips and marshmallow creme until melted, stir in vanilla.

  3. Spread immediately in foil-lined 9 inch square pan. Cool at room temperature at least 4 hours; cut into 81 (1 inch) squares. Store in airtight container. Makes 3 lbs, or 40 servings, 2 squares each.
