This came from another site, but I've modified it to cut the carbs, lower the fat even further, and up the fiber content.

Recipe Ingredients for Fantastic Low Fat Banana Bread - Revisited

1 1/4 c Splenda granulated
1/2 c skim milk powder
1/2 tsp baking powder
1/4 c applesauce, unsweetened
1/2 c egg substitute
1 c bananas, mashed
1/2 c buttermilk
1 tsp vanilla
1 1/2 c flour
1 c whole wheat flour
1 tsp baking soda
1 tsp salt

Recipe Directions for Fantastic Low Fat Banana Bread - Revisited

  1. Set oven to 350 degrees

  2. Grease bottoms only of two 8X4 loaf pans

  3. In a large bowl with an electric mixer at medium speed mix together the Splenda, milk powder, baking soda, applesauce, margarine and vanilla until well blended.

  4. Add in the masked bananas and buttermilk; beat until smooth.

  5. In a small bowl mix together flours with baking soda; add to wet mixture; stir with a wooden spoon until just blended. Avoid overmixing.

  6. Divide the mixture between the two pans.

  7. Place both pans directly in the middle of the oven on the oven rack, leaving a couple of inches between pans.

  8. Bake for 60 minutes or until the loaves test done.

  9. Cool 10 minutes in pan, then loosen the sides and remove from pans.

  10. Cool completely and then slice.
