A luxurious, sinful, decadent Macaroni & Cheese variant baked to golden, gooey perfection. The variety of cheeses combine to make a smooth, flavorful sauce, while the bacon adds a salty depth.

Recipe Ingredients for Fancy 7-Cheese'n'Bacon Mac'n'Cheese

1 tbsp salt
1 gallon of water
1 lb penne rigate
8 oz sharp cheddar cheese, shredded
8 oz mozzarella cheese, shredded
7 oz Brie cheese, peeled and torn into chunks
8 oz blue cheese
4 cups whole milk
4 tbsp butter
3 tbsp all purpose flour
16 oz thick sliced bacon, cooked and crumbled
1 tsp mustard powder
1 tsp white pepper
1/2 tsp hot sauce
3 tbsp bread crumbs
1 1/2 oz shredded Parmesan Asiago Romano blend (3 tbsp)

Recipe Directions for Fancy 7-Cheese'n'Bacon Mac'n'Cheese

  1. Pre-heat your oven to 350 degrees.

  2. Bring the water and salt to a boil in a dutch oven. Once achieved, add the pasta and cook, stirring gently and occasionally until just past al dente (in general, cook 1-2 minutes less than the box calls for). Drain it and set aside.

  3. While the pasta is cooking, work on your bacon. In general, one 16 oz package of thick-sliced works, though you may have 2-3 strips left over for nibbling! Cook it through near completely--leave few rubbery, fatty bits. Crumble it once cooled into 1/2 inch pieces.

  4. In a dutch oven over medium heat, melt the butter and cook it until most of the bubbles have dissipated. Stirring rapidly, add the flour, being careful to watch for clumps.

  5. Once the two are mixed, slowly add the milk, once again stirring or whisking briskly to incorporate the liquid before it sears or the roux you prepared clumps up. Continue to stir and cook it until the milk is hot.

  6. Pull out a small amount of the milk and add the pepper and mustard powder to it. Mix thoroughly, then mix this back into the main pot (doing so will help reduce clumping of the dry ingredients). Add a few dashes of hot sauce and mix them in as well. Some people might add a bit of salt here, as well, but the cheese takes care of this for the most part.

  7. Add the cheese in batches, stirring thoroughly to incorporate it throughout. Keep the heat at medium or medium low if it begins to stick to the bottom of the pot. Once it's completely melted and mixed, add about 2/3 of the bacon crumbles and mix again to incorporate. Finally, add the pasta, making sure to break up any large clumps that may have formed while it dried.

  8. Pour this mixture into a 9x14 baking dish (glass or pyrex if possible) and bake for approximately 35-45 minutes until bubbly and beginning to brown on top. Let it cool slightly and then serve.
