A lower fat higher fiber verion of my family's favorite meal night - Taco Night

Recipe Ingredients for Family Taco Night

16 oz Ground Turkey
12 Taco Shells
1 cup Instant Brown Rice (fast & Natural Whole Grain)
8 tsp Taco Seasoning
2 cups Black Beans (canned)
1 cup Mild Diced Tomato and Green Chillies
2 cups Tomatoes, Petite Diced
4 tbsp Fat Free Sour Cream
24 tbsp Picante Sauce (mild)
112 g Shredded Cheese
6 Tomato, Small
1 cup Cilantro
4 cups Lettuce, Romaine

Recipe Directions for Family Taco Night

  1. Brown turkey meat, add taco seasoning and can of diced tomatoes.

  2. Prepare the Brown Rice according to package instructions and add can of Rotel tomatoes and chilis and 1 tblsp on Chili Powder.

  3. Warm the Black Beans and add 1/2 teaspon of Chili Powder (or to taste)

  4. Warm Tostadas and Taco Shells in an over set to 250 for about 5 - 10 minutes.

  5. Dice Fresh Tomatoes, Cilantro, lettuce and other veggies you want to serve with the tacos.

  6. Serve family style and assemble at table.

  7. Salsa and Sour Cream to taste.
