Original recipe uses 3 cheeses: cheddar (12 oz), gruyere(8 oz) and parmesan(2 oz)...we didn't have all three

Recipe Ingredients for Family Circle Magazine Mac&Cheese

16 oz penne rigate
22 oz shredded cheddar cheese
3 tbsp butter
3 tbsp all-purpose flour
2 cups milk
1/2 tsp onion powder
1/8 tsp cayenne pepper

Recipe Directions for Family Circle Magazine Mac&Cheese

  1. Heat oven to 350 and coat a 2qt baking dish with cooking spray.

  2. Bring a pot of lightly salted water to a boil.

  3. Once boiling, add pasta. Cook 6 minutes, then drain.

  4. While pasta cooks, toss cheeses together in a big bowl and set aside.

  5. Meanwhile, melt butter in a small sauce pan over medium heat.

  6. Whisk in flour until smooth and slightly bubbly.

  7. In a thin stream whisk in milk.

  8. Stir in spices and bring to a boil over medium-high heat.

  9. Reduce heat and simmer 3 minutes.

  10. Remove from heat and whisk in 2 1/2 cups of cheese mix.

  11. In the pasta pot, mix pasta and cheese sauce.

  12. Pour half of pasta mixture into baking dish. Sprinkle with generous cup of cheese.

  13. Spoon remaining pasta into dish and top with remaining cheese.

  14. Bake at 350 for 20 min, then increase temp to broil and cook 3 min until top is slightly browned.

  15. Cool slightly before serving.
