Recipe Ingredients for Familie Fritzsche Leipziger Allerlei

300 grams peas
300 grams green beans, sliced
300 grams carrots, sliced
300 grams green asparagus, cut in thirds
300 grams white asparagus, cut in thirds
300 grams turnips, sliced
1 head cauliflower, cut into florets
150 grams mushrooms, sliced
4 tablespoons butter
4 tablespoons flour
480 milliliters milk, hot
2 egg yolks, beaten
1/2 teaspoon salt
1/2 teaspoon pepper

Recipe Directions for Familie Fritzsche Leipziger Allerlei

  1. Bring a pot of lightly salted water to a boil.

  2. Add the beans,peas, carrots, asparagus, turnips and cauliflower.

  3. Cook until tender then drain and set aside.

  4. Melt the butter in a pan and fry the mushrooms in it for 5 minutes.

  5. Scatter the flour over the top and stir thoroughly to combine.

  6. Continue cooking, stirring constantly for 3 minutes or until the roux has browned.

  7. Stir in the hot milk a little at a time until you have a smooth sauce.

  8. Whisk the egg yolks in a bowl.

  9. Add 1/4 cup of the hot milk sauce, whisking constantly (this tempers the eggs).

  10. Turn mixture into the pan with the mushrooms and stir to combine.

  11. Cook for a minute then add seasonings.

  12. Turn the vegetables into the pan and cook for two minutes or until heated through.

  13. Serve hot. (May be served cold)
