hearty, satisfying, uses oatmeal to thicken make sure you use fresh fall vegetable, cut into satisfying chunks

Recipe Ingredients for Fall vegetable soup

2 cups potatoes
1 cup carrots
2 cups onions
1 cup celery
2 cups tomatoes (I use canned)
1/4 cup oatmeal
2 T butter
3 cups chicken stock

Recipe Directions for Fall vegetable soup

  1. melt 2T butter over medium heat

  2. add chopped onions - once they start to clear, add chopped potatoes, carrots and celery

  3. braise vegetable for about 5 minutes. Then add juice from canned tomatoes, chicken stock and oatmeal

  4. When veggies are all tender, add chopped tomatoes and salt and pepper to taste
