Recipe from Good Housekeeping... quick and easy. Added corn, made 6 servings instead of 4... it's plenty, trust me. Next time, I will also only use 1 cup of water.

Recipe Ingredients for Fall Vegetable Chili

1 tbsp light olive oil
2 medium carrots, peeled and cut into 1/2 in pieces
1 cup (2 medium) parsnips, peeled and cut into 1/2 in pieces
1 medium onion, chopped
32 oz (2 cans) red kidney beans, rinsed and drained
4 tsp chili powder
28 oz (1 can) tomatoes, whole in juice
1/4 cup fresh cilantro, chopped
14 oz (1 can) corn

Recipe Directions for Fall Vegetable Chili

  1. In a 5 quart saucepan, heat olive oil on medium-high heat until hot. Add carrots, parsnips, and chopped onion, adn cook 6-8 minutes or until all vegetables are tender and beginning to brown, stirring occasionally.

  2. Meanwhile, on large plate, with fork or potato masher, mash 1 cup drained beans.

  3. Stir chili powder into vegetables in saucepan; cook 1 minute, stirring. Add tomatoes with their juice, whole and mashed beans, and 2 cups of water; heat to boiling on high, breaking up tomatoes with side of spoon. Add corn. Reduce heat to medium and cook, uncovered, 10 minutes, stirring occasionally. Stir in cilantro to serve.
