1 eggplant, cut into 1/2 inch chunks
1 onion, cut into 1/2 inch chunks
1 zucchini, cut into 1/2 inch chunks
1 red pepper, cut into strips
2 tbsps italian salad dressing
19 oz stewed tomatoes, undrained
1/4 cup parmesean cheese
1/4 cup mozzarella cheese

Recipe Directions for FALL RATATOUILLE

  1. COOK FIRST 5 INGREDIENTS IN LARGE OVENPROOF

  2. SKILLET ON MEDIUM HEAT 5 MINUTES

  3. OR UNTIL CRISP TENDER, STIRRING FREQUENTLY

  4. STIR IN TOMATOES, COOK 15 MINUTES, STIRRING OCCASSIONALLY. TOP WITH CHEESE

  5. HEAT OVEN TO 350 BAKE VEGETABLE MIXTURE

  6. 15 MINUTES OR UNTIL GOLDEN BROWN.
