Good filling sandwiches. I serve with Greek salad or grape and walnut salad.

Recipe Ingredients for Falalfel-stuffed Pitas

1/4 c breadcrumbs
1/4 c cilantro, chopped
1 1/2 tsp cumin, ground
1/2 tsp salt
1/4 tsp red pepper, ground
2 garlic cloves, crushed
1 egg, large
15 oz. chickpeas (canned, drained)
1 T olive oil
1/2 c yogurt, low fat, plain
2 T lemon juice (fresh)
2 T tahini
1 garlic clove, minced
4 pita, whole wheat, cut in half
8 lettuce leaves, curly lettuce
1 tomatoes, sliced into 16 1/4 inch slices

Recipe Directions for Falalfel-stuffed Pitas

  1. Place 1st 8 ingredients (through chickpeas) in food processor. Process until smooth. Divide into 16 portions and make 1/4 inch thick patties. Heat olive oil in non stick pan over medium high heat. Cook 5 minutes per side or until browned.

  2. To prepare sauce, combine yogurt, lemon juice, tahini and minced garlic clove, using a whisk.

  3. Spread about 1 1/2 T sauce per pita half. Fill with one lettuce leaf, two tomato slices and two patties.
