This is a greek dish my wife and I like to eat. It's hard to find greek in the midwest. This is also served with pitas and yogurt sauce. I am creating a recipe for the yogurt sauce right after this.

Recipe Ingredients for Falafels

2 tbsp olive oil
15 ounces chickpeas
1 cup diced onion
3 garlic cloves - smashed
1/4 cup fresh cilantro - packed
1 lemon - zest
1/2 tspn kosher salt
1/2 tspn ground cumin
1/2 tspn red pepper flakes
1/2 tspn baking powder
1/3 cup all-purpose flour
1 egg, beaten

Recipe Directions for Falafels

  1. Coat a 9x13" metal baking pan with nonstick spray & 1 tablespoon olive oil; place inside oven preheat oven to 375 degrees.

  2. Pulse chickpeas, onion, garlic cloves, cilantro, zest, salt, & cumin, pepperflakes, & baking powder in food processor until minced byt not a paste.

  3. Transfer to a bowl & stir in flour & egg until fully incorporated.

  4. Drop mixture in balls the size of golf balls onto hot baking sheet & bake 20 minutes.

  5. Brush falafels with remaining oil, flip & bake until golden on both sides, 15-20 minutes more.
