Recipe Ingredients for Falafel Skewers

1 cup chickpeas
1 tablespoon water
1 cup frozen peas
1/2 small onion
1 garlic clove
1 teaspoon cumin
1 tablespoon cilantro
1 tablespoon flour
2 tomatoes
2 tablespoons mint
1 tablespoon olive oil
1 salt and pepper

Recipe Directions for Falafel Skewers

  1. The evening before, blend together the chickpeas and water in a food processor until a thick paste is achieved. Add the peas, onion, garli,cumin, cilantro, flour, and seasoning and blend again

  2. Use two spoons to shape the mixture into 8 balls on a plate. Flatten the top slightly and chillfor 30 minutes to make firm. Place the tomato in a bowl, seasonand stir though the mint,

  3. Heat the oil in a skillet over a meduimheat and fry the falafel balls until golden, about 5 minutes, turning once. Drain on paper towels.

  4. Thread 2 falafelballs onto a skewer, with a piece of tomato.
